Banana Bread Protein Muffins.
They’re delicious.

Ingredients:

  • 1 cup mashed banana
  •  3/4 cup egg whites
  • 6oz plain Greek yogurt
  • 1/2 cup oat flour
  • 1/2 cup chopped walnuts
  • 3.5 scoops vanilla protein powder (MRM)
  • 6 packets stevia
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp cinnamon

Preheat oven to 350 degrees. Make sure to use a healthy dose of non-stick spray because these will stick. Mix all ingredients in a food processor. Pour mixture evenly into 12 muffin liners or tray. Bake 15-18 minutes. Enjoy!

112 calories, 9g carbs, and 10g protein per muffin.

Ingredients:

  • 2 zucchini, julienne or cut into ribbons
  • 4 cloves garlic, chopped
  • 2 shallots, diced
  • 3 tomatoes, diced
  • 4 tsp olive oil
  • salt and pepper
  • crushed red pepper flakes to taste
  • 8 oz angel hair pasta, (Ronzoni Smart Taste)
  • 1/4 cup low-sodium fat-free chicken or (vegetable broth for vegetarian)


Directions
In a large pot of salted boiling water, cook pasta according to instructions.

While pasta is cooking, in a large saute pan, heat pan on medium-high flame, add oilwhen pan is hot. Add garlic and shallots to the pan and saute about 1 minute. Add zucchini and season with salt and pepper. Cook about 2 minutes, add tomatoes, crushed red pepper flakes, parsley, chicken broth and adjust salt and pepper. Stir for another minute. Remove from flame.

Drain pasta when done reserving some of the water and and toss the pasta well with zucchini. Add pasta water if needed and serve with grated Parmesan (optional).

Tired of healthy recipes that taste like bathroom cleaner? Yeah, me too. This banana chocolate chip muffin is so delicious that you won’t believe it’s made from mostly healthy ingredients. I made this today and my mom and dad loved it. Plus it doesn’t have obscure ingredients. Yay :D Yields 12 muffins at 100 calories each.
Ingredients3 small ripe bananas, mashed1 egg, beaten 2 tablespoons of greek yogurt1/4 cup sugar (you can use less if you’re not a sweet tooth OR substitute for a low-calorie sweetener)1/3 cup applesauce1/4 teaspoon salt1/2 teaspoon baking soda2/3 cup white flour2/3 cup whole grain flour1 teaspoon cinnamon (optional)3 tablespoons chocolate chips (try dark chocolate if you can) 
Directions1. Preheat oven to 350 degrees.2. In a large mixing bowl, blend together sugar and greek yogurt until smooth. Add the applesauce and egg, and blend again. Finally, add in the mashed bananas. Blend away!3. In another bowl, mix together white flour, whole grain flour, salt, baking soda, and cinnamon.4. Mini Protein Berry Cheesecakes

  • 1 small 170g tub of 0% Total Greek yogurt
  • 2 tbsp of quark (or cottage cheese)
  • 1 tbsp of coconut flour
  • 1/4 cup of mulberries (or any other dried berry)
  • 2 fresh organic eggs
  • 1/4 cup of vanilla whey

Directions

  1. Blend ingredients together.
  2. Add 1 cup of fresh blackberries.
  3. Mix berries in with fork/spoon instead of blending.
  4. Pour the mix into your mold/s.
  5. Bake at 170º C (340º F) for about 35 minutes. 
  6. Take them out, let them cool, eat them.

Nutritional Profile (per mini cheesecake, makes 9)

  • Calories: 58.7
  • Fat: 1.6g
  • Carbs: 4.4g
  • Protein: 6.5g

The 40 Calorie Flour Tortilla

I made some home made guacamole to go with these. They’re pretty easy to make and delicious!

Market Comparison:

In terms of cost, I’m not sure as I’ve never bought tortillas from the store… But I imagine they do not cost 1 cent per tortilla. Nutritionally, 1 Flour Mission Tortilla is 150 calories… These are about a FOURTH of that. :)

Ingredients:

  • 1/8 Teaspoon Salt
  • .5 oz Water
  • 1/4 Cup Flour
  • 1/8 Teaspoon Baking Powder

Servings: Creates 2 Tortillas (1 Tortilla = 1 Serving)

Nutritional Facts:

  • Calories Per Serving: 41.25 cal
  • Fat (g) per Serving: 0.00 g
  • Carbs (g) per Serving: 8.63 g
  • Protein (g) per Serving: 1.13 g

Directions:

  1. Combine all ingredients into a bowl and mix. Dough should combine in to a single ball. If this doesn’t happen, add a little more water incrementally until it does.
  2. Cover the dough with a wet towel or cloth for ~15 minutes.
  3. Split dough into two balls. Roll into round shapes.
  4. Flour the counter.
  5. Take each ball and roll out into a very flat circle.
  6. Take each circle and place onto an ungreased skillet.
  7. Cook over medium heat until tortilla starts to show brown spots.
  8. Enjoy!
